Paul has spent a decade championing native WA ingredients, working alongside First Nations communities and producers, with Noma, DOM and Pujol behind him. Paolo, born in Bergamo, leads the kitchen in the Print Hall precinct with one unchanged philosophy: every dish is built with love.
